Watermelon & Feta Salad

o 2 Tbsp olive oil
o 1 Tbsp white wine vinegar
o 1 Tbsp lime juice
o 1⁄4 tsp each salt and pepper
o 1⁄4 small red onion, thinly sliced
o 1-lb piece seedless watermelon, rind removed, cut into thin chunks
o 1⁄2 seedless cucumber, cut in half horizontally, sliced
o 3 cups baby arugula
o 3 oz feta cheese, crumbled
1. In a bowl, whisk together dressing ingredients. Add onion and let sit 10 minutes.
2. Add watermelon, cucumber and arugula to bowl. Gently toss to combine.
3. Top salad with crumbled feta and serve.
